Tom is our multi dinner/event host and does an amazing job serving us every time. Make sure and ask for him. The filet is amazing and make sure to ask for the chimi-churi steak sauce.

Ate here with my wife and a couple of friends on a Friday night. We had reservations, which was good as the place was busy. Seated right away and the service staff was attentive and prompt. Somm helped us pick an excellent bottle to go with our meal and the waiter made some good suggestions for entrees. I started with their seasonal butternut squash soup that was incredible. Textures, flavors and visuals made it an amazing starter. For my entree I had the North American Wagyu cap that's part filet and part ribeye. It was tasty but definitely needed the peppercorn sauce I ordered with it. We ordered table sides, Brussels sprouts that were pretty good, mushrooms and the truffle mac & cheese that was full on legit. All in all a good meal. My one beef with this place (pun intended) is that where we were seated there were huge windows looking out on Vegas. The hotel next to us had this 40 story screen on the front that was playing the entire time and the light it cast into the dining room was distracting and annoying. Not much the venue can do about this, but you might think about where you sit if you dine here.

We booked this place before a show. We were seated in this cute little 2 person booth. I had the Black Walnut Manhattan and she had the Gearshift, non-boozy drink. Both drinks were delicious, very good. We had the Wagyu Cheesesteak Bites appetizer and this dish was the star of the whole night...wow, so tasty. We both got the filet. Being able to choose out cutlery was a really cool touch. Food in general was great. We only had one complaint, which made this a 4 star instead of a 5 star review. When our steaks arrived, they were not hot and the plates weren't warmed. We both ordered the black truffle butter on the steaks, which didn't melt because they weren't warm enough. Other than that, no other complaints. Service, drinks, atmosphere, etc., was all good.

Signature dishes like the perfectly seared Tomahawk steak pair beautifully with their extensive wine list and handcrafted cocktails. When ordering a steak you will also be given a choice of different steak knives to use from a wooden box that your server will present table-side. The ambiance was beautiful out in their atrium area decorated at this time for Christmas.

Probably the best meal I've ever had. From start to finish... our server was personable and felt like she listened to what I liked and made it feel like we were her only table when i could see she was extremely busy. Nina was amazing! We were tired from the night before and she recommended thet we start with Espresso martinis.. they were just what we needed to bring us back from the long night we had the night before! The wedge salad was probably the best salad I've ever had at a steakhouse. I had the rib cap, with onion rings and Brussels sprouts. Sooooo gooood!! We finished with crem brûlée... and another round of espresso martinis.... Before i left i needed to hit the head and Jonathan didn't just tell me where the restroom was he walked me all the way to the Cookie Monster painting... id give those two 6 stars if it was an option. I'll be back and gonna tell all my friends to ask for her as their server!

Recently had the opportunity to dine at Carversteak for my mom's birthday dinner. Right when we got seated, they gave her a birthday card and everyone throughout the night wished her happy birthday. Super thoughtful touch that made her feel special on her birthday! The food itself was amazing - everything we ordered even down to the salad was delicious. Service was amazing, never had to ask for anything because they really thought of everything. I loved the knife selection for our steaks too! I'd recommend ordering the martini cart as they make it table side and it's a fun little experience. I'd recommend dining her for a girls night out, date night, or a celebration!

Carversteak was a hit! Everything we tried was delicious and the service was A plus! We tried different steaks, each cooked perfectly. We can really taste the difference between each of the cuts. Each person gets to choose their steak knives which was a fun twist. The service was super attentive but not in an intrusive way. Water was always filled. Requests promptly followed up. Our waiter Michael was super knowledgeable and friendly. The ambiance was also perfect, lighting not too dim but you don't need a flashlight to read the menu, and classic rock and R&B music played in the background, but not so loud that you can't hold a conversation. Overall could not asked for more for our dining experience.

Reservations for 2 @ 7pm on Saturday. We were seated promptly however they put us in their private knife room dining area right off the bar instead of the main dining room, which I didn't care for. It felt like being left out from the "adult table". Aside from that, service was fantastic. Ordered: Wagyu Sliders: 5/5 Delicious! You only get 2 but don't pass them up. Crab cake: 3.5/5 $32 Presented in a fun way with old bay seasoning in the shape of a crab on the plate (pic didn't turn out good). It was good but lacking on the lump crab. French Onion soup: 5/5 didn't look the best with some burnt cheese on the outside but tasted great. Scallops: 4/5 Scallops were cooked to perfection. Succulent. I could have done without all the sauce they were in with even more sauce on the side. Way too much. Striploin: 5/5 cooked to the perfect temperature. Delicious.

I have been here several times, and every time the bill has been picked up by the company I was with, which definitely helps the good time. However, having said that, read on... Las Vegas is rife with Steakhouses- overpriced, over-the-top steakhouses. I find most of them pretentious, and the steaks are unnecessarily expensive- it's a steak, not a bar of gold. There are a few steakhouse that I have been to that are actually okay, and go against the pretentious mode- and Carversteak is one of them. While expensive, it is not pretentious, the service is excellent without being overbearing and the steaks are definitely good. On my most recent visit, I was with a group of 10, I ordered a Wedge Salad and an aged KC bone-in Strip steak. While it wasn't the best steak I ever had, it was good, cooked perfectly, although it lacked that "aged" flavor which I love so much. Still, it was good and I was happy. Again, all the steakhouses in Vegas, this is definitely one of the better ones. Still expensive, but hey, welcome to Vegas...
